Make Luscious Chocolatecream Cheese Truffles

Make your own truffles.


Chocolate truffles are particular popular around Valentine's Day, but you don't have to restrict yourself -- or your sweetheart -- to having this delicious treat just once a year. Combining chocolate with cream cheese makes thick, rich truffles that are perfect for gift-giving, even if the gift is just to yourself.


Instructions


1. Melt 12 ounces of chocolate in the microwave or by setting it over a bath of simmering water. Chocolate burns easily, so keep an eye on it. Make sure no moisture gets into the melting chocolate or it will seize up and be ruined.


2. Beat the cream cheese until fluffy. Slowly beat in the powdered sugar. The mixture should be fairly stiff.


3. Add flavoring or liqueur and continue beating until incorporated. An option is to separate the mixture into a few different batches, then add a different flavoring to each.


4. Pour in the melted chocolate and continue beating until incorporated.


5. Roll the mixture into balls the size of a large walnut. Set on a cookie sheet lined with parchment paper until cool. The candies should be firm to the touch.


6. Melt the remaining chocolate. Use a fork to dip each hardened candy into the melted chocolate. Allow any excess to drip back into bowl, and replace the candies on the parchment paper. Let cool.
