Make Tilapia

Tilapia pairs well with light white wines like Pinot Grigio.


Tilapia is a relatively inexpensive white fish that is available in the seafood section of many grocery stores. It is a fairly flexible ingredient that can be pan-fried, baked or flaked for use in dishes like fish tacos. A straightforward presentation that serves well as a main dish is a lightly breaded pan-fried tilapia with a simple butter sauce that incorporates the pan drippings. To keep the tilapia warm while you finish up the sauce, place it in a 300 degree oven on a baking sheet lined with paper towels. Add this to my Recipe Box.


Instructions


1. Preheat oven to 300 degrees.


2. Coat the tilapia fillets in seasoned flour on both sides, shaking off excess flour.


3. Heat oil in a large frying pan over medium-high heat. Brown the tilapia fillets for two to three minutes on each side, or until done. The fish is done when it is white in the center, not translucent.


4. Remove tilapia from the pan and turn the heat to low. Add butter, lemon juice, garlic and parsley and simmer for two minutes.


5. Place tilapia on serving plates, drizzle with butter sauce and garnish with a sprig of parsley.
