Pig Feet Salad

Pigs feet have a gelatinous texture.


Pig's feet, or pig trotters, are a cut of pork used in several dishes throughout the world. If you prepare it correctly, the meat of pig trotters is flavorful and works well in a salad. Pig feet salad utilizes a variety of vegetables and fruit to complement the flavor of the meat. The salad requires approximately five hours to prepare from start to finish. A basic pig trotter salad recipe yields eight to ten 1-cup servings. Add this to my Recipe Box.


Instructions


1. Combine 1 gallon water, 3/4 cup soy sauce and 1/4 cup honey in a stockpot. Bring to a boil over high heat. Add eight pig trotters and cover the stockpot. Leave to boil for 60 minutes.


2. Remove the pig trotters from the water with metal tongs. Peel the skin off the meat and remove the meat from the bones. Discard the skin and bones and place the meat into a large salad bowl. Cover the salad bowl with plastic wrap and refrigerate for two hours.


3. Add 2 cups diced green onion, 1 cup diced green bell pepper, 1 1/2 cups snap peas, one 8-oz. can drained mandarin oranges and one 3-oz. can chow mein noodles to the salad bowl. Toss with a wooden spoon.


4. Drizzle 1/4 cup soy sauce over the top of the salad and cover with a sheet of plastic wrap. Refrigerate for two hours before serving.
