Cook Fermented Rice

Fermented rice can be stored at room temperature.


Fermented rice is a slightly sweet dish with a mild hint of alcohol. You can eat fermented rice a la carte or mix in sweeteners, such as honey, to make an enticing dessert. Since fermented rice is an ethnic specialty, you may have to make a trip to your local Asian market for the main ingredients. Allow for 90 minutes of initial preparation, and six days for the rice to ferment. This recipe yields enough fermented rice for one large serving or two small servings. Add this to my Recipe Box.


Instructions


1. Combine the rice and 2 cups of water in bowl. Cover bowl and allow rice to soak for one hour.


2. Drain excess water from the rice. Pour the soaked rice into a rice steamer and add 1 1/2 cups water. Cook for 30 minutes.


3. Use the back of a spoon to mash one ragi yeast cake into a fine powder.


4. Stir the yeast powder into the rice.


5. Pour the rice into a ceramic dish with a lid. Cover the dish and leave it at room temperature for six days.


6. Serve at room temperature or warm in the in microwave.
