Bbq Boston Butt Pork

Barbecued Boston butt is popular served in a pulled pork sandwich.

Boston butt is an inexpensive cut of meat that is frequently served as barbecue and made in an oven, crock pot or smoker. Although the name may give the impression that the meat is from the hind-quarters of the pig, it actually refers to the upper part of the pig's front legs and is commonly called pork shoulder. As Boston butt is a tougher cut of meat and has more connective tissue than a tender pork loin, it is best when slow cooked over low heat for several hours. Add this to my Recipe Box.

Instructions

1. Mix the salt, pepper, brown sugar, garlic salt and paprika in a bowl to create a dry rub for the meat. Experiment with the amount of seasoning until you come up with a mixture that suits your taste.

2. Rub the spice mixture liberally over the entire Boston butt.

3. Place the pork shoulder and sliced onions into a roasting pan inside a preheated smoker or into a 350-degree oven. You can also place them directly into a crock pot set on the lowest temperature setting.

4. Allow the meat and onions to cook for two and a half to three hours, depending on the size. The meat will be done when its internal temperature is 160 degrees Fahrenheit.

5. Remove the cooked Boston butt and onions from the roasting pan and let them rest 15 minutes to redistribute the juices. Chop them and place the mixture in a serving bowl.

6. Mix your favorite barbecue sauce into the meat and serve.
