Prepare Dried Soy Beans

Dried soybeans cook like other dry legumes.


Dried soybeans will last longer than fresh. Like other forms of dried beans, you must reconstitute these beans before cooking. Soy beans are a high protein legume. When planning the amount of dried soybeans to cook, estimate each dried cup will produce 2 1/2 cups cooked soybeans. Add this to my Recipe Box.


Instructions


1. Mix the water and baking soda in a sauce pan.


2. Add 1 cup of soybeans to the water and soak at room temperature for four to eight hours.


3. Bring the soaking liquid and soybeans to a boil. Cook for 20 minutes.


4. Cool the soybeans in the pan until you can comfortably put your hands under the water.


5. Rub the beans under the water with your hands to remove the skins.


6. Skim the skins that float to the top of the water with a slotted spoon.


7. Drain the soybeans through a colander.


8. Return the soybeans to the pot and cover with water.


9. Boil the soybeans for 90 to 120 minutes or until the soybeans become tender. Do not add salt to the soybeans until after cooking.
