Roast California Chicken

A roasted California chicken is a simple and delicious main course.


Roasted chicken is a favorite of poultry lovers everywhere for its crisp skin, moist breast meat, and tender dark meat. Whether you choose to baste or dry rub a chicken, or slow or fast roast it, roasted chicken is a classic dish that can be served on a busy weeknight or at a sophisticated dinner party. A few chicken dishes are specific to California chicken, such as the peach-infused roasted California chicken. Add this to my Recipe Box.


Instructions


1. Preheat your own to 375 degrees Fahrenheit.


2. Rinse the whole California chicken thoroughly. Dry it with a towel while patting the chicken breast and thighs to loosen the skin.


3. Chop the California peaches so that you have 1/2 cup. The peaches should be cut into very small pieces. Place the peaches under the chicken in the roasting pan.


4. Chop the onion, cilantro and jalapeno. Each should be finely diced. Combine the leftover peaches with the chopped onion, cilantro and jalapeno. Place the mixture into the chicken.


5. Crush salt and pepper over the chicken to the amount that you desire.


6. In a small bowl, mix together the peach jam, tequila and olive oil. Whisk the mixture until there are no lumps and it has become a smooth paste. Brush this sauce over the top of the chicken so that it is evenly coated.


7. Place the roast pan containing the chicken into the oven. Roast the chicken for approximately 20 minutes or until the chicken is crisp and golden in coloring. Check the chicken and ensure that it is at 180 degrees Fahrenheit before you remove it from the oven. Allow the dish to cool for a few minutes before serving.
