Make Roast Chicken

Roast chicken


Why spend more for a supermarket rotisserie chicken when you can make your own at home in an hour for less than half the cost? Buy whole fryers when they're on sale and roast the perfect bird using this recipe. Add this to my Recipe Box.


Instructions


1. Preheat oven to 400 degrees. Remove chicken from wrapper and rinse thoroughly inside and out. Remove giblets from inside and discard.


2. Pat chicken dry using paper towels. Place chicken, breast side up, in glass baking dish. Rub inside and out with about 1 to 3 tbsp. good quality olive oil. Add salt, pepper and about 2 tbsp. dried parsley inside and out.


3. Thinly slice 3/4 of the lemon and place slices inside chicken.


4. Squeeze juice from remaining 1/4 lemon on top of chicken.


5. Bake uncovered at 400 for one hour. Chicken is done when drumstick moves easily and skin is browned. Remove from oven, cover with aluminum foil and let rest for 10 to 15 minutes before carving.
