Slice Bamboo Shoots

Learn to properly slice bamboo for eating.


Bamboo shoots come from the new growth on young bamboo canes. The shoots are harvested before they fully mature so they are still tender within their outer woody covering. They require proper slicing and cooking, otherwise they are too tough and bitter. When prepared correctly they provide a crunchy texture and mildly sweet flavor. Bamboo adds crunch to many Asian dishes but can also be added to salads or used as a topping in Western recipes. Add this to my Recipe Box.


Instructions


1. Lay the shoot on its side on the cutting board. Cut the roots off the shoot with a sharp knife.


2. Pull the outer leaves off the shoot. Peel the tough outer portion of the shoot off with a vegetable peeler.


3. Lay the shoot on its side. Cut crosswise into 1/8-inch thick slices.


4. Leave the slices whole or cut them into 1/4-inch wide sticks, depending on your recipe and preferences. Smaller pieces cook more quickly than large slices.
