Steam Cook Millet

Millet is drought-resistant and highly nutritious.


Millet is a very small, round grain, a staple in many regions where the climate is unfavorable to other grains. Millet is gluten-free and highly nutritious, characteristics that have contributed to a rise in its popularity in America. It can be used as a direct substitute in any dish calling for rice, and is steamed in the same manner. Add this to my Recipe Box.


Instructions


1. Toast one cup of millet in a dry saucepan over medium heat. Shake the pot frequently to ensure even heating. Remove the pot from the heat, once the millet is evenly browned and smells toasted and nutty.


2. Add two to 2 1/2 cups of water, depending whether you like your millet dryer or softer. Salt the water lightly, and bring it up to a simmer.


3. Cover the pot and cook the millet for 20 to 25 minutes, until there is just a wisp of steam escaping from the pot. Remove the pot from the heat, and let stand for five minutes.


4. Remove the lid from the pot, and fluff the steamed millet with a fork. Serve immediately, or cool for later use.
